The figure shown to somebody joining your stream and the one on your own hosting panel are built differently and update on different clocks. If you record one and later check the other, you get a difference that describes the discrepancy rather than the order. Decide which of the two you are measuring before you start, and take both readings there.
A few minutes after the stream opens. At the close the number has moved repeatedly for reasons unrelated to the delivery, and separating them afterwards is guesswork rather than measurement.
Twenty is visible on a quiet stream and invisible on a busy one, so the reading depends as much on your usual audience as on the delivery. If you regularly draw hundreds, rely on the order status instead. That is arithmetic rather than a fault, and it is worth accepting before rather than after.
